East Texas Beef Processors provides harvest and processing services for your domestic livestock needs. Our mission is to be a truly custom processor that strives to cut your beef your way. Our cut sheet is designed so that we may better serve our customers by walking through each item cut by cut and providing the absolute best service available. In our experience customers do not enjoy seeing beef cuts in their freezer that they do not recognize or would not use as is. Therefore, we strive to make every cut of the animal into something useful and desired by the customer. We typically dry age all beef at least 10 days to allow the meat to evaporate excess moisture increasing the beef flavor. Dry aging beef also allows the natural enzymes to activate and further break down the fibers producing a more succulent and tender piece of beef. After fabricating your animal to your specific cut sheet your product is then vacuum packaged, labeled, and frozen without the addition of any preservatives or meat additives. We are a USDA inspected facility with an assigned inspector on site who inspects every animal thoroughly. Since we are USDA inspected you will be able to sell your product in the manner of your choosing.

Harvest/Processing Pricing

  • Harvest Fee $125: (This includes harvest of the animal, skinning, evisceration, retaining the5th quarter organs “if desired”, and disposal of the inedible remains) 
  • Custom Processing: $1.25 per pound based off of the hot or hanging weight. (This includestenderizing, cutting steaks to specifications, portion control cutting, packaging as desired,ancestral ground beef, and any other fabrication requests) 

Bison

  • Harvest Fee $150: (This includes harvest of the animal, skinning, evisceration, retaining the 5th quarter organs “if desired”, and disposal of the inedible remains)
  • Custom Processing: $1.40 per pound based off of the hot or hanging weight.
  • Voluntary Slaughter Fee: $185

Optional Additional Services

  • USDA Grading/Certification $50 per head: Increase the value of your beef by selling USDA graded beef to your consumers. Or determine the meat quality yielded from your herd bulls by discovering the beef grades on your animals.
  • Hamburger Patties $1.00 per pound: Patties are formed in three sizes based off the approximate weights 4oz (1/4 lb), 6oz (1/3 lb), and 8oz (1/2 lb).
  • Linked Sausage $2.75 per pound.
  • Custom Label One-time fee of $125.00: If you have a custom logo in a PDF format that would help you market your own product, we can also customize your labels to display your very own logo.

*We ask that all customers refrain from feeding cattle 24 hours before drop off*

Remember to check your voicemail & emails for notice your animal is ready for pickup! Customers have 5 business days to pick up meat after notification. After that, a $25.00 per day charge will apply. There is a 30 day max hold time, after this time, product becomes available for donation or disposal.

All cattle 30 months of age and over must be fabricated into all boneless cuts and kidneys are disposed of per USDA regulations.
